Goat Cheese and Tomato Dressing

Yield: About 1-1/2 cups dressing

Makes about 1-1/2 cups dressing

Ingredients

  • 2 oz rindless goat cheese (chèvre)
  • 2 Tbsp Tarragon Vinegar
  • 1 Tbsp fresh basil leaves, finely chopped
  • 1 or 2 ripe medium tomatoes, coarsely chopped (about 1 cup)
  • 1/2 cup
  • Salt and pepper to taste

Instructions

  1. Pulse the goat cheese, vinegar and basil in a blender to combine. Add the tomato and purée. With the machine running, gradually add the oil until the mixture is smooth. Season it with salt and pepper. Store in a covered jar in the fridge for up to 2 weeks. Shake well before using.
